I have an easycap capture card and Ulead VideoStudio, but i was wondering if i could bypass the capture card itself. Could i, or is there anyway, to say… plug my Xbox 360 via HDMI into my computer, and connect the computer also via HDMI to my tv and still record it with JUST the VideoStudio software? The reason i ask is cause i would like a better quality video than the crap the little device gives.
No. Your easycap card uses RCA connectors. Without a higher grade capture card, you cannot get anything better than what you’re already getting. For what you are wanting to do, you will need to purchase something like:

Expensive, but what you want to do just isn’t something that is being produced for home users at this point.

Yes, you need the device – the video capture software simply records what the video capture card is seeing. Try to think of the capture card as the "eyes" for the software. If you don’t have the capture card, then the software is blind and won’t be able to record anything.
